Chicken Vesuvio ~ a Chicago Specialty!

Chicken that's “Vesuvioed,” tastes better than you could ever imagine!  It’s a meat-and-potatoes dish from meat-and potatoes Chi-Town, it’s indigenous to Chicago.

Ummm, mmm!  Delicious!

It's still a little chilly and rainy so this dish hit the spot!

Rustle Up This Tasty John Wayne Casserole for Supper!

He was an American icon,
ranking right up there with
Washington, Elvis, Lincoln, MLK, Jr, Superman,
JFK, Marilyn Monroe and Davy Crockett...

Painting by Norman Rockwell

 He's the Duke, John Wayne!

Serve Belly-filling Baked Ziti for Dinner!

Cheater’s Lasagna should be

the name for this dish!

Do you like lasagna, but could do without the fuss?  Make this baked ziti instead.  It has about the same flavors, is easy to make and is just as tasty.

Prime Rib for Our Christmas Eve Dinner!

This is the roast beef of your dreams...

😉

The ends will be medium-well, and the

center will be beautifully medium-rare,

giving everyone what they prefer.

Tradition here in our family is

succulent mouth-watering prime rib

for Christmas Eve dinner!

Easy Baked Chicken Breasts with Brown Sugar and Garlic Rub

You all know how the nursery rhyme goes:

"Sugar and spice and

everything nice."

That describes this delectable rub when sugar meets garlic...

We’re all aware that chicken is a great source of protein, it’s a smart food choice.  And we all know that eating it often gets old after a while.

Crispy Baked Catfish

Bill isn't in to grilling in chilly or rainy weather,
and that's what we're still having.
Since last Wednesday, our rain gauge
has totaled 7-inches.

So to compensate, there’s extra oomph in this baked catfish recipe, thanks to the addition of tangy and sweet French dressing!

Fork-tender Oven-Baked Pork Chops

Just tasty tender pork chops here,
coated with a great dry rub.

This is my go-to rub, a good blend of aromatic herbs and spices: Hungarian sweet paprika, garlic powder, onion powder, salt, seasoned pepper and oregano.  It’s everyday ingredients most of us have on hand.

Crispy Cheddar Chicken for Dinner!

Who doesn’t like cheese?

Well, I know a few of those people, but that’s not the case here with us, so I knew this chicken dish would be on our menu soon when I saw it on Larry’s blog.

Chow down on Cowboy Chicken Casserole

Yee-ha!

Here’s a casserole with great ingredients that
any cowboy would like to chow down on.
And so do we when it's a chilly night here.
It’s Cowboy Chicken Casserole!

It’s a wholesome concoction of chicken, black beans, corn, cheese, salsa, tortillas and seasonings that come together to make this a tasty hearty filling dinner.

Cowboy Chicken lives up to its name with bringing to mind the good flavors of the Southwest.

Perfect Baked Chicken Breast

Looking for a recipe for baked chicken breast?
This is the only recipe you'll need!

The ubiquitous chicken just might be the most popular meat around.  Cooks love it for its versatility and folks, young and old, love the flavor of it.  I’ve cooked a lot of chicken in my lifetime, and we think this is one of the best!

Creamy Cucumber Tomato Salad

Light and refreshing,
this creamy cucumber tomato salad is a hit with any meal!

It’s a classic salad that’s good on its own or served with grilled chicken, fish, pork or burgers or grilled steak. In other words, it’s a tasty side dish that goes for most any meat!

A SIDE OF ROASTED REDSKIN POTATOES WITH ONIONS

This isn’t a fancy or complicated recipe...
Flavorful and irresistible, these garlic potatoes are good for any meal of the day.

I'm a fan of potatoes made about any way, with the exception of potato soup ~ found something else for dinner when Mom made that years ago.

Down East Crab Cakes

Down East Crab Cakes
taste great,
less filler!

The Down East Crab Cake name comes from crabmeat mixed with eggs and sauce,
no mayonnaise included!

Most of us love the sweet, briny crab meat that comes from the coasts.  Crab cakes started out as a measure of thrift.

Herb-Crusted Sirloin Tip Roast and More than you Wanted to Know

With beef being one of the
Midwest’s favorite meats,
definitely mine,
here’s an intensely flavored sirloin tip roast!

A lean cut from the bottom sirloin, this economical choice is delicious when roasted with a rub and carved into thin slices to enjoy its rich, deep beefy flavor.

Party with CHEX PARTY MIX with SRIRACHA

OK, I can see you rolling your eyes now...

This is not your run of the mill Chex mix recipe off the back of the box, this is my recipe, a spicier version!

Way back in the early 1950’s, Ralston Purina wanted a way to get people to eat a lot more of its cereal.  That’s when the classic recipe for the famous snack mix was printed on the back of Wheat Chex and Rice Chex boxes.  The recipe included Worcestershire sauce, butter, garlic salt, salt and nuts baked in an oven.

Delicious Savory Mushroom Casserole!

No mushroom foraging for me ~ that’s a practice that could kill a person if a mistake was made!  The grocery store is my mushroom source.

Spicy Roasted Pork Tenderloin

Here’s the scoop:
crispy on the outside,
juicy and tender on the inside,
packed with savory spices!

Pork tenderloin is great ~ it's healthfully lean and reasonably priced at our local Jewel grocery store, making it affordable for a meal any day, and it's hard to mess up.

Fresh Green Beans Cooked to Death with Bacon

I know the trendy sophisticated way is to barely cook green beans so that they have some crunch to them while maintaining their brilliant green emerald-like color.  That’s not my way for an old-fashioned down-home side dish of garden fresh green beans in my kitchen...

I grew up in Louisville ~ I learned to cook fresh green beans the Southern way ~ slow-cooked to death, usually with bacon drippings, a ham hock or bacon like this recipe.  We all know the saying, “bacon makes everything better!”  Pour a little chicken broth in with the seasonings, for a perfect side dish.
