SLOW COOKER SANTA FE CHICKEN


It was a frigid -1° on the thermometer in our backyard this morning, it’s at 9° now, and there's too much snow on the ground.  

 
















No wonder we head to the kitchen for a hearty warming meal like this...




I pulled the slow cooker out of the cabinet to make this recipe that’s floating all around the internet.  

The dish consists of shredded chicken with tomatoes, corn and black beans.  It’s an easy meal made in the slow cooker, filled with good ingredients that require no pre-cooking, it’s a great dump-and-slow-cook meal.  


Make this recipe your own by adding kidney beans or pinto beans, a jar of salsa, and topping it with sour cream, cheddar cheese also, maybe cilantro, if you like that.  The variations are endless, whatever you like that suits your taste.

I served the stew over rice for a filling dinner. Bill thought it was great, and leftovers aren’t bad either, served over nachos!




SLOW COOKER SANTA FE CHICKEN 

Ingredients:                                                                                                            
1½ pounds chicken breast
1 (14.4 ounces) can fat-free chicken broth
1 (14.4 ounces) can diced tomatoes with mild green chilies
1 (15 ounces) can black beans, rinsed and drained
8 ounces frozen corn
¼ cup parsley, chopped 1 small onion, chopped
1 teaspoon garlic powder
1 teaspoon onion powder
½ teaspoon salt
1 teaspoon seasoned pepper
Cayenne pepper, to taste
Chopped chives, for garnish (or green onions)

Method:

Combine chicken broth, drained beans, corn, tomatoes, parsley, onion, garlic powder, onion powder, salt, pepper and cayenne pepper in the slow cooker.
Season chicken breast with salt and lay on top.
Cook on low for 8-10 hours or on high for 4 to 6 hours.
Thirty minutes before serving, removed chicken and shred.
Return chicken to slow cooker and stir in.
Adjust salt and seasonings to taste.
Serve over rice or tortillas.
Garnish with chives or your favorite toppings.

  1. No slow cooker but it is easily adaptable. Chicken and dumplings and now this...yes to some really nice comfort meals. Hope it warms up soon. Would you believe that it was 39 in our part of Florida this morning, that is cold for our area.

    3. Too funny! I can imagine NH weather! We are really going into the deep freeze this next week. About a foot of snow on the way tonight and down to -20° in the middle of the week. Brrrrr!

  2. It's freaking cold here in Europe too. I have been drinking beef broth whole day long to warm me up. I should make something heartier like this...it looks really delicious too, Pam.

  7. Pam, Nice recipe for cold weather! We could also modify it by using pork I would think. In any case, its about 50 here today with no snow so far this winter...plenty of rain. Take Care, Big Daddy Dave
