Chewy Ginger Molasses Cookies, Yum!

 

Rich sticky molasses helps keep these 

incredibly delicious cookies magically 

fresh and chewy for days!

 


I truly love this cookie and so does Bubba ~ it's my favorite ginger cookie.  It’s spicy, loaded with plenty of molasses, ginger, cinnamon, cardamom and allspice, but not too spicy or overwhelming.  The spices fuse and trigger your taste buds, popping that unique gingery molasses flavor.  

 

Baked Donut Holes----Two Versions

 

You might be satisfied with eating just one ~ 

not me ~ 

it’s 2 or 3 of these sweet tiny gems for me.  

And because they’re baked, not fried, 

that’s OK!

Tasty Banana Bread with Dried Cherries

 

Tweaking a classic banana bread 

works for me, 

particularly when 

dried cherries are in the mix!

 

 

As bananas ripen to their prime squishiness ~ when they are barely yellow ~ but streaked with black and brown, even solid black, that’s the time to make banana bread.

From the rich, creamy, sweet frosting to the delectable moist cake, it’s hard to be in a funk when devouring a cupcake!



The gems first appeared back in 1828 when an ingenious young woman, Eliza Leslie, published her cookbook, Seventy-Five Receipts for Pastry, Cakes and Sweetmeats, which included the recipe for the first cupcake.

Easy Baked Sugar-free Chocolate Cake Donuts

 


Mom loved Krispy Kreme donuts, 

so did my boss at work.  

I didn’t get it ~ seemed to me ~ might as well 
eat a cup of sugar.



Even mini chocolate chip calories can add up quickly.  Recently, I was happy to discover Lily’s chocolate chips, a mere 50 calories per tablespoon.


Homemade Baked Cinnamon "Sugar" Donuts


Lately, (like the last 5 years) I’ve seen a plethora of bloggers praising how good their baked donuts ~ I secretly wondered ~ how good are they, really?  



The food blogger side of me is just a touch embarrassed to admit I’m more than a little late in hopping on the baked-donut-band-wagon.

CLASSIC PEANUT BUTTER BLOSSOMS


Soft, chewy peanut-buttery cookies, rolled in sugar and topped with a Hershey kiss ~ a cookie both sweet and salty.  In other words, Peanut Butter Blossoms!




Blossom cookies debuted at the ninth Pillsbury Bake-Off and have been a classic Christmas cookie since then. In my way of thinking, they’re a good thing to bake any time of the year!

RASPBERRY WALNUT LINZER BARS



Classic linzer cookies are a real delight, but this easier rendition has all the basic elements in a pan that you can bake, cut into bars and serve! 

A cookie winner for sure, so tasty delicious!


This is an adaptation of Claudia’s Linzer Bars over at What’s Cookin’ Italian Style Cuisine.  She used pistachios, I had a plethora of walnuts on hand and incorporated them.

It’s the molasses here that keeps these cookies fresh and chewy for days, with the generous amount of peppery ginger giving them their tang, and the nice compliment of cardamom adding its zesty, spicy herbal flavor to the cookies.

Everyone has their foibles ~ for me, it’s that corner slab of cornbread ~ the slice with two crispy edges.  Grandma liked it crumbled, submerged in a glass of cold buttermilk, and eaten with a spoon ~ whatever floats your boat...

This is an all-time favorite meal here at our house!

it’s a delicious comfort dish for chilly snowy weather!


Chicken always gets top billing, but it’s the dumplings that sway people so easily.  There are a plethora of ways to make this dish, and this time I followed Paula Deen’s most of the way...

'Tis Cookie Season ~~~ Spicy Crinkle Cookies

Every year at this time, I make a plethora of Christmas cookies ~ last year the tally was 51 dozen.  Cookies for my family, and cookies to share with neighbors, friends, and more.

If you’re looking for a sweet cornbread, you won’t find it here; in my way of thinking, real cornbread is not sweetThis is southern-style corn bread, plenty of buttermilk and sour cream, and not a touch of sugar.  This is some tasty cornbread ~ just ask Bubba...
