Rich sticky molasses helps keep these
incredibly delicious cookies magically
fresh and chewy for days!
I truly love this cookie and so does Bubba ~ it's my favorite ginger cookie. It’s spicy, loaded with plenty of molasses, ginger, cinnamon, cardamom and allspice, but not too spicy or overwhelming. The spices fuse and trigger your taste buds, popping that unique gingery molasses flavor.
The recipe is an adaptation of a molasses cookie recipe in the Chicago Tribune way back when. You can make them any time of the year, but to me they scream Christmas...
This cookie is easy to make, it delivers a cookie with a slightly crisp edge, a chewy center, with just the right amount of spices and sugar, that stays fresh for days.
Most ovens don’t distribute heat evenly, so I rotated the baking sheets half-way through the baking process for even baking.
The important thing is ~ do not over-bake! Bake the cookies until they are puffed, slightly cracked and golden around the edges, but still soft in the center, to achieve a soft chewy cookie.
Ah, the aroma while they're baking is a wonderful thing...

DeleteI'm guessing that the aroma is pretty amazing when these cookies are baking. I love molasses cookies, but the rest of my family is stuck on Chocolate Chip. Just can't beat a good ol' Molasses cookie, not only during the Holidays, but all year long. Merry Christmas Pam, to you and your family
ReplyDeleteHi Shug! Yes, to the aroma, awesome! Molasses and ginger works here but then so does chocolate chip. Thanks and Merry Christmas to you and yours, Shug!

ReplyDeleteHi Liz! Yes, the crackled top does it, they really are good and easy to make. Take care
DeleteHow can one enjoy the holidays without a good chewy cookie? Your chewy ginger molasses cookies certainly would be that cookie for me. We don't get molasses here, but I have a can of black treacle (English), so I'll try your recipe with that. You guys have a safe, warm and wonderful holiday season...
ReplyDeleteThanks, Ron! Yes, it's a great Christmas cookie with a slight bite to it with all that ginger. I had to Google black treacle, sounds like a good substitute. Hope you like the cookies as much as we do! Here's wishing you and yours a wonderful holiday season, be safe!
