I love pie and I love cake, but cobbler puts me over the moon happy 🌝. I will gladly crank up the oven for it, regardless of the high temperatures of summer...

Heavenly juicy peaches were ripe and so were the sweet blackberries ~ this was the perfect time to make 2 cobblers, to make us all happy!

These cobblers are lightened up with a sugar replacement - substitute regular sugar in the same amount, if you like.
The cobbler is filled with just the right amount of sweetness using Swerve, the dessert is not overly sweet, it tastes great; I would be hard-pressed to tell the difference from the real thing!
It couldn't be easier to make ~ whatever fruit you want, and spices too; maybe nutmeg, cloves, vanilla, allspice, or even pepper, or not. Try a splash of bourbon or blackberry brandy!

And you can really bake it in whatever dish or pan you have, even a large skillet ~ just so it can hold about 8 cups.

Cobbler is a simple, easy, timeless dessert that's lip-smacking good ~ a dessert that takes already delicious summer fruit to a whole new level!

Bet you’ll be doing a happy dance after the first bite! You know how little kids and dogs wiggle and dance around with the anticipation of eating something scrumptious ~ they're expressing how much they love the taste of something tasty and delicious.
So, bet you'll be doing a happy dance also, just like Bill and Bubba did!
Two Cobblers, Peach & Blackberry, Lightened Up
Ingredients:
- 4 cups peaches, peeled and sliced
- ½ cup Swerve Sugar Replacement
- 1 teaspoon lemon zest
- 1 tablespoon lemon juice
- ½ heaping teaspoon cinnamon
- ¼ teaspoon cardamom
- 1½ tablespoons cornstarch (or instant tapioca
- 4 cups blackberries
- 2 teaspoons ground ginger
- ½ teaspoon lemon zest
- ½ - ¾ cup Swerve Sugar Replacement
- ¼ cup water
- Juice from 1 lime (about 2 tablespoons)
- 2 tablespoons corn starch
- 2 cups flour
- ½ cup Swerve Sugar Replacement
- 4 teaspoons orange zest
- 1½ teaspoons baking powder
- ½ teaspoon baking soda
- ½ heaping teaspoon salt
- 8 tablespoons cold butter
- 2 eggs, lightly beaten
- ½ cup milk
Method:
- PEACHES:
- In a large bowl, combine all ingredients.
- Transfer to a 9-inch x 9-inch baking dish that has been coated with cooking spray.
- BLACKBERRIES:
- Place all the ingredients in a medium bowl, and combine lightly.
- Let berries sit for at least 15 minutes for juices to accumulate.
- Spread in a 9-inch x 9-inch baking dish that has been coated with cooking spray.
- Preheat oven to 350°.
- In a medium bowl, whisk the first 6 ingredients (through salt).
- Cut in the butter until mixture resembles coarse crumbs.
- Make a well in the center of dough and stir in milk and beaten eggs until dough is just moistened.
- Scoop up dough in large spoonfuls and drop over the fruit in the baking dish like cobblestones.
- Bake for about 30 minutes, until topping is golden brown and fruit is bubbly.
- Serve warm or room temperature.
- Great topped with a scoop of vanilla ice cream or a large dollop of whipped cream.






Blackberry is favorite and I sure can see why this is lip smacking good!
