Bill isn't in to grilling in chilly or rainy weather,
and that's what we're still having.
Since last Wednesday, our rain gauge
has totaled 7-inches.
So to compensate, there’s extra oomph in this baked catfish recipe, thanks to the addition of tangy and sweet French dressing!
Coat the catfish with the dressing, then dredge with cornmeal and just the right blend of spices: chili powder, smoked paprika, and garlic powder. It’s a simple and delicious way for the fish.
Catfish abounds here, it’s easy to find in any grocery store, and is relatively inexpensive. Catfish not available in your area: use any other white fish: flounder, haddock, cod, tilapia, you name it. You don’t care for French dressing? Use ranch or your favorite.
Serve up this Crispy Baked Catfish for a delicious dinner this evening ~ it’s that great catfish goodness baked into perfection without all the fat and messy clean-up.
What a great change of pace from the usual fried catfish, hope you like it as much as we do!
And here's hoping for better weather ~ let grilling season begin!

We have been under stay-at-home orders since March 20, not many businesses open other than grocery stores, fast-food restaurants and dog groomers ~ evidently our governor must have a dog that needs grooming ~ forget about everyone's hair in Illinois!
But then, even though we have very strict travel rules, his family flies their private jet between their Florida mansion and their Wisconsin farm.
That's life near the big city, when a wanna' be dictator rules the state...
And now this morning we hear this, he wants lock-down for 150 days!
Crispy Baked Catfish
Prep time: 10 MCook time: 20 MTotal time: 30 M
Ingredients:
- 1 pound catfish
- 1/4 cup yellow cornmeal
- 1/4 cup dry bread crumbs
- 1 teaspoon chili powder
- 1/2 teaspoon smoked paprika
- 1/2 teaspoon garlic powder
- 1/4 teaspoon salt
- 1/4 teaspoon seasoned pepper
- 1/4 cup French dressing
Method:
- Preheat oven to 450°.
- Spray broiler pan rack with cooking spray.
- If fish fillets are large, cut into 4 serving pieces.
- Mix cornmeal, bread crumbs, chili powder, paprika, garlic salt and pepper.
- Lightly brush dressing on all sides of fish.
- Coat fish with cornmeal mixture.
- Place fish on rack in broiler pan.
- Bake uncovered about 20 minutes or until fish flakes easily with fork.
- Serve

DeleteWe have also had a lot of rain. Strange world we are living in at the present time in many aspects!! Wish we could buy catfish here, I have never seen it for sale, or on a menu in either South Africa or Europe.

DeleteHow many new cases of the virus are still happening every day? The progress of the virus is pretty relentless, so it's hard to argue with continued measures to control it. Illinois reported a decline in cases for one day yesterday, I wish you good luck that it will keep on going that way and make it safe to open up.

ReplyDeleteHi Pam, Love this recipe! Wouldn't have ever thought about French Dressing with catfish...but add garlic powder, smoked paprika and chili powder and it makes sense... Not doing much grilling right now as my grill is 'dead'. Need to have it hauled away and replaced with a new one. As for governors, ours is about the opposite of yours. We are pretty much wide open as of this Friday. No limits on restaurants, major attractions are open (with social distancing and masks 'recommended') and our virus count is on the rise. To willing to reopen a couple of weeks too early. Your governor reminds me of a certain sitting President ego wise... Stay Safe and Take Care, Big Daddy Dave

DeletePam, you got me missing that river catfish I used to eat as a kid. We don't have a native catfish like your US version (wish we did) but we have plenty of cod. The french dressing might be a problem finding here but I just googled and fond an easy copycat recipe. I can't wait to try this one.
