Roasted Robusto Italian Chicken Breasts with Mushrooms
This recipe is truly simple and seriously satisfying!
I’ve mentioned more than once that I’m a big fan of Wish-Bone Robusto Italian Dressing. It’s not only great on salad; it does a great job of marinating meat also.
Spicy Goodness ~ Grilled Cajun-Style Chicken Breasts

They were hunters, fishermen, and farmers, well-versed in the art of living off the land, when they arrived destitute in the New Orleans area, and were given land grants. The Acadians had a strong bond with each other as they moved into the bayous, swamps and prairies of Louisiana to start their farms.
Their old traditions and language merged with the distinctive Louisiana landscape to fuse into a new Cajun cultural identity.
A lot of people are unaware that the typical Cajun food was developed by extremely poor people. Refugees and farmers used what they had to feed large families.
Bill and I have visited the New Orleans area many times, and love Cajun-style cooking ~ it’s aromatic, spicy, and rich, really good…
This time, I used a generous portion of minced garlic, onion powder and oregano, all whisked together with spicy Robusto Italian dressing for the chicken marinade.
Bill grilled the chicken to a spicy, moist, delicious meat for our dinner.

Grilled Cajun-Style Chicken Breasts

Ingredients:
4 boneless skinless chicken breasts
1 cup Wish-Bone Robusto Italian Dressing
2 tablespoons minced garlic
3 tablespoons Cajun seasoning
1 teaspoon onion powder
1 teaspoon oregano
½ teaspoon each, salt and pepper
Method:
Combine marinade ingredients in a large bowl or a resealable plastic bag.
Add chicken breasts and let marinate for at least 30 minutes in the refrigerator.
Remove chicken from marinade, shaking off excess.
When grill is heated, place chicken on grill over medium heat.
Grill chicken until cooked through, about 6-8 minutes per side, depending upon thickness, or when thermometer registers 165°.
Serve

Cranberry-Sauced Chicken
This robust sauce takes chicken
or
leftover turkey
from ordinary to extraordinary

Cranberry sauce combined with Robusto Italian Dressing, balsamic vinegar, sherry and onion soup mix blends into a tangy sauce to top the chicken breasts.
What you end up with is tender, flavorful tasty chicken, with a tangy sauce that is the right combination of sweet and tangy. It’s proof that cranberry sauce shouldn’t just make an appearance on the holiday table.

Cranberry-Sauced Chicken
Ingredients:
4-6 skinless, boneless chicken breasts
1 cup cranberry sauce
1 packet dry onion soup mix
1 tablespoon balsamic vinegar
⅓ cup Wish-Bone Robusto Italian Dressing
1 teaspoon seasoned pepper
Method:
Preheat oven to 325 degrees.
Arrange chicken in a 13” x 9” baking dish.
Combine remaining ingredients in a medium bowl, and stir well.
Spoon mixture over chicken.
Bake for 1 hour or more, until chicken is cooked through.
Serve

Orange Roughy w/Roasted Grape Tomatoes
Orange roughy
was mingling with grape tomatoes, black olives and lemon slices for our dinner
last evening.
This is a
recipe of few ingredients, that’s big on flavor. Adding the robust zesty taste is Roubsto
Italian Dressing by Wishbone. If you’ve
never used it, you’ll be amazed at how zesty delicious it is; it definitely has
a kick to it!
Bake this for a quick delicious dinner ~ it’s good enough for company!
Orange Roughy w/Roasted Grape Tomatoes
Ingredients:
3 orange
roughy fillets
1 pint grape
tomatoes, halvedSalt and seasoned pepper
1 lemon, sliced thin
1/3 cup Wishbone Robusto Italian Dressing
½ pitted black olives, sliced
Cooking spray
Method:
Preheat oven
to 400 degrees.
Spread tomatoes
over bottom of 11” x 7” baking dish that has been coated with cooking spray.Sprinkle fillets with salt and seasoned pepper, place on tomatoes.
Arrange lemon slices over fish.
Combine dressing and olives, spoon over lemon and fillets.
Bake for 15-20 minutes, depending on thickness of fish, until it flakes easily with a fork.
Serve immediately.

Tender and Delicious Italian-Style Baked Chicken Breasts

Everyone seems to love chicken and there are several things I like about this recipe: the ease of preparation, just a few simple ingredients and no sacrifice of the flavor because it is simple. It tastes mmm mmm good!
This dish is great for a weeknight meal or company also. Just dip the chicken breasts into beaten eggs, coat them with the Parmesan bread crumb mixture, drizzle with the spicy, garlicky Robusto Italian dressing and pop them into the oven. They come out baked to perfection, being fork tender. I served it with rice and a crisp mesclun salad.
Italian-Style Baked Chicken Breasts

If you're in the mood for chicken tonight, this is a great easy recipe, the chicken is delicious, thanks to the Italian dressing and Parmesan. It's a hit!
Ingredients:
- 4 boneless skinless chicken breasts, pounded thin if very thick
- 2 eggs, beaten
- 1 cup Parmesan cheese
- 1 cup Italian bread crumbs
- ½ tablespoon garlic powder
- ¼ teaspoon salt
- ¼-½ teaspoon seasoned pepper
- ¼ cup Wishbone Robusto Italian Salad Dressing
- 4 teaspoons butter
Method:
- Wash chicken, pat dry.
- Combine cheese, bread crumbs, garlic powder, salt and pepper on a plate.
- Dip chicken into eggs.
- Dredge chicken with crumb mixture.
- Place on greased baking sheet.
- Drizzle with salad dressing.
- Place pat of butter on each chicken breast.
- Bake at 350 degrees for 45 minutes.
