Toast the New Year with a Champagne Margarita!



This cocktail combines
two of my favorites ~
Margaritas and Tequila!




For a non-traditional take on the bubbly, combine Cointreau, tequila, simple syrup, and lime juice, top it off with champagne and make a toast!

Rick Bayless has given his holiday Champagne Margarita a twist:  It has a tang that awakens your taste buds, it's on the tart side which is what I like, sweet it isn’t.  If it’s too tart for you, stir in a little superfine sugar before chilling.  

Starting with fresh lime juice is key, according to Rick ~ the difference between it and what you buy bottled is huge.  Choose a decent tequila that is 100% agave. 

It’s a boozy concoction that will give you a new opinion of what tequila has to offer!



It is a very drinkable classy Margarita.  Probably too drinkable...


Yield: Makes 8 6-ounce drinks

CHAMPAGNE MARGARITA

For a non-traditional take on the bubbly, Rich Bayless combines Cointreau, tequila, simple syrup, and lime juice. Top it off with champagne and make a toast!

ingredients:

  • 1 cup fresh lime juice
  • 1 cup Cointreau
  • 1 cup Partida Tequila, Blanco or other silver tequila
  • Superfine sugar, if needed for added sweetness
  • 1 lime, cut in half for serving
  • Coarse (Kosher) salt, for serving
  • 1 bottle Champagne or other sparkling wine

How to cook CHAMPAGNE MARGARITA

  1. In a pitcher, combine the lime zest, lime juice, Cointreau, tequila and sugar if you are using it. Cover and refrigerate until cold (at least 1 hour).
  2. Just before serving, strain the mixture to remove the zest, and pour enough salt into a saucer to cover the bottom.
  3. Rub a lime half over the rim of each champagne glass and upend into the salt to crust it lightly.
  4. Pour about 3 ounces of the tequila mixture into each glass, fill the rest of the way with Champagne or sparkling wine and hand to one of your lucky guests.
