After Almost 9 Years, it's So Long with a Corn Salad Recipe


It has been almost 9 years, since October 2009, that I started this blog.  That's a lot of posts and I've reached the point where it has become a chore for me, so it's time to say so long.

It has been a great journey, I've learned a lot from all of you over the years and thank you all very much for your support of Pam's Midwest Kitchen Korner!  I'm leaving you with a great summer recipe that I hope you'll try...


It’s looks like fiesta time when you serve this spicy corn salad for your crowd! 


We all know how easy it is to get carried away at BBQ’s with all the great potato salads, baked beans, chips, meat basted with barbecue sauce and over the top rich desserts.  It’s all great, but this dish adds something with a lighter touch to your table...

Sweet corn, black beans, red bell pepper, cucumber and onions are stirred together and added to a nonfat yogurt dressing that has a bit of a kick added with garlic and cayenne pepper.  No added fat makes it guilt free.




This is a perfect healthy quick summer salad that gives you a break from your green salad.  Use this dressing as a salad topping, or as a dip with a crudité platter.  Whichever way, I bet you’ll think it’s tasty!

I think it’s a drool-worthy side for your bbq!


Yield: 6 servings      

Light Summer-fresh Corn Salad

It’s looks like fiesta time when you serve this spicy corn salad for your crowd!

Ingredients:

SALAD:
  • 1 (11 ounces) can crisp corn, or 2 ears corn, kernels scraped from the cob
  • 1 (15 ounces) can black beans, drained and rinsed
  • 1 large cucumber, chopped
  • 1 red bell pepper, diced
  • 1 small Vidalia onion, chopped
  • Dill sprig for garnish
DRESSING:
  • 3/4 cup plain non-fat Greek yogurt
  • 1 tablespoon rice vinegar
  • 2 cloves garlic, minced
  • 1/2 teaspoon onion powder
  • 1/4 teaspoon cayenne pepper
  • 1/2 teaspoon chili powder
  • 1 teaspoon sugar
  • Salt and pepper, to taste

Instructions:

In a large bowl, lightly toss all salad ingredients, except dill sprig.

In a small bowl, whisk together all dressing ingredients and pour over salad, refrigerate until chilled, about 2 hours.

Serve garnished with dill sprig, if desired.

  1. It's nice of you to inform us of your decision to stop blogging for now; it shows respect for your readers. Some bloggers just disappear without a word leaving us worried.

    I'll miss you, your posts, your writing style, your pictures. I feel I've learnt a lot from your blog and vast experience about food, photography, writing.
    The corn salad is indeed a lovely way to say good bye: it's light, healthy and festive.

  3. Wow nine years is a big commitment of time but sorry to see you go. I understand when things become a chore it's time to move on. If my blog wasn't a diary of our recipes and travels, I would give it up as well, but I refer to it several times a week - twice already this morning.

  6. Pam, Sorry you're leaving the blog world...but I do understand. I've been doing this for 8 years as of July 4th and sometimes I think about quitting as well. However it does keep my mind active with writing, photography and research so I'm good for now. As Big Dude said, like his blog, my blog is a diary as much as anything else...   16. Sorry to see you give it up Mom, but if you're not having fun with it any longer I get it. I guess now I'll have to archive a lot of these so I have them.
    Except for the sausage- that one's hanging on my fridge so it's a constant reminder to make it every couple of months :)

I started 10 years ago and the thought of stopping has crossed my mind quite many times especially when I am torturing myself over a steaming pot or oven on a hot summer day in order to deliver a new recipe, but I always keep saying not now and keep going. It is always sad to hear that someone is leaving our community but at the same time it is an opportunity for you to start new exciting things.   27. I started in October of 2009 too :) I think that was the time of the big blog explosion and many of us went on the same adventure. I, too, feel like it gets to be a chore sometimes and I haven't put up a post in over three weeks because we've just been so busy this summer and I also need time to relax and enjoy being outdoors while we can. I hope you don't delete your blog as it's a great reference site and I have pinned quite a few of your recipes ♥
